How to Make Spring Renewal Herbal Tea

Ingredients:

• 2 cups fresh mint leaves
• 1 cup fresh dandelion leaves
• 1 cup fresh nettle leaves
• 1/4 cup dried elderflower
• 1 tbsp honey
• 2 tsp grated ginger
• 1 tsp lemon zest
• 8 cups water

Instructions:

1. Bring water to a boil and add the ginger, lemon zest, and honey. Reduce the heat and let it simmer for 5 minutes.
2. Turn off the heat, then add the fresh mint, dandelion, and nettle leaves, and dried elderflower. Cover and steep for 10 minutes.
3. Remove from heat and let it cool to room temperature.
4. Strain the mixture into a pitcher and refrigerate it for at least an hour or up to overnight.
5. Before serving, give it a quick stir and taste it, add more honey if needed.
6. Serve chilled over ice, garnish with a fresh sprig of mint or a slice of lemon.
